The Ternary

NOLA Smokehouse and Bar

Barangaroo foodie favourite, NOLA Smokehouse and Bar brings the best of America’s southern hospitality to Sydney. Just when you thought summer couldn’t get any better, gelato cocktails arrive at NOLA. Head into the bar to try their three limited edition gelato and sorbet cocktails ($20) featuring scoops from fellow Barangaroo resident and gelato geniuses, RivaReno. Here are this summer's selection of tantilising flavours:

  • NOLA Spritz: gin, Aperol, mandarin sorbet, sparkling wine, soda, and fresh blood orange
  • Pina Colada Fizz: white rum, spiced rum, pineapple juice, coconut gelato, and soda
  • Burgundy St. Highball: vodka, blackberry liqueur, raspberry sorbet, grapefruit juice, ginger beer, and fresh berries

O Bar and Dining

Situated on the 47th floor in Australia Square, O Bar and Dining’s unique circular space offers breathtaking panoramic views and some of the best of contemporary dining in the city. In time for summer, their new cocktail range plays on classic blends and summertime flavours. Here are their four drinks for the season:

  • Blueberry & Vanilla Mojito - Bacardi rum, blueberry vanilla syrup, pressed lime and garden mint
  • Wildfire- Organic Vodka O, ginger and cucumber infusion, passionfruit, chilli floss and pressed lemon
  • Castaway Colada-Sagatiba Cachaca, cherry liqueur, salted coconut syrup, pineapple, cherries and chocolate bitters
  • Frosé - Provence Rosé, Pampelle grapefruit liqueur, fresh grapefruit and agave nectar

The Foxtrot Inn

Calling the Lower North Shore home, this boutique cocktail bar boasts a relaxed vibe that keeps the locals coming in every night. The Foxtrot Inn has multiple intimate areas within the venue, from their recently renovated open-air rooftop garden, to the dimly-lit, cosy nooks downstairs. Their brand new summer cocktail menu focuses on tropical flavours and all 15 cocktails have been carefully crafted using only fresh, seasonal produce and 100% house-made ingredients. If you have a sweet tooth, the Lovers Orchard and Strawberry Thyme are must-trys, and the Grapefruit and finger lime Collins and Foxtrot Negroni are a gin-lover's dream.

Flying Fish

Jumping ship from Jones Bay to take over a shiny new location at The Star, The Flying Fish not only showcases some the city's finest seafood, they have a dazzling summer cocktail menu that's equally as impressive. For gin drinkers, the Béhz-ness has put together a twist on the classic Negroni, with strawberry gin, Campari and Australian sweet vermouth. The Bondi House Fizz is a vibrant, violet cocktail, with lemon myrtle vodka and butterfly pea iced tea – the perfect tipple for sweet palates.

    Tea house by day, gin bar by night; The Star Sydney has lifted the lid on its newest addition, G&Tea – a stylish, quirky bar on the ground floor of the Astral Hotel. Immerse yourself in pure luxury with architecturally designed interiors and a menu that will leave you wanting more. As for their gin-infused cocktails, the two standouts out are their delectable Gin Bramble with Tanqueray, Crème de Mure, fresh lemon juice and sugar syrup and their take on the Negroni with Four Pillars, Campari, sweet red vermouth and a twist of orange.

    There's an art to nailing the perfect summer cocktail – and one that Bar Patrón has truly mastered, fusing the perfect balance of flavours, textures and seasonal ingredients. A highlight from the drinks menu, and a perfect summer pick-me-up, is the Horchata Collada: their take on the classic Pina Colada. Smooth and fresh with hints of coconut, we guarantee this is the drink you'll be sipping on all summer long.

    The Botanica Vaucluse

    A lush, vibrant oasis, The Botanica Vaucluse is the perfect place to wind down and escape the summer heat. Inspired by their botanical theme, their new summer drinks and spritz menu features the likes of Regal Rogue vermouth, refreshing bespoke and classic cocktails, and a selection of Seedlip mocktails. To get a taste of what's on offer, start off with the RR Wild Rosé, featuring Regal Rogue Vermouth, strawberry, rose geranium, lavender and prosecco, then move onto the Saphira Martini that combines Belvedere citrus vodka, passionfruit, and apple, served en coupette.
